He wasn't perfect. He has shown his perverted side when the kid flipped her skirt ("I wanted to see it too!").
He was also slightly narcissistic with his obsession of how handsome he was and when he spent few days modelling for a statue.
We mostly see him during his "hero" moments, but it seems he was a normal guy that really wanted to be a true hero, so he often roleplayed one.

When the modern audience member is confronted with media that isn't meant for him, he shrieks "PARODY! SATIRE! THIS DON'T BE REAL!" as the idea of a Christlike figure or even the existence of someone who isn't a monster is too much for his irony-poisoned mind.
Also Frieren misses Himmel and loved him, so of course all her memories we see of him would be positive. You should be able to understand this if you have a functional mind. I don't even fully blame you since most modern media is allergic to the idea of a morally white hero and nobody reads books anymore. In all likelihood you were never exposed to heroes growing up, only walking deconstructions and commentaries on why being a hero is actually [negative buzzword of the day].

Also count how many times you get th s short stories in the show about married couples which gets connected directly to Frieren and Himmel. The reason she helps Denken out next season is because him talking about all the precious times he spent with his wife before she died directly reminded her of the times she spent with Himmel

She's basically a grieving widow who never realised she should have gotten married until it was too late
