That makes me wonder if the Demon Lords were just really strong as angels already and gained new powers as Demon Lords by embodying their sin, or if there are other angel-tier demons around. Because when Lucifer refers to himself he just says that he is an angel, and he says that Mr. Priest's greatest assest was channeling the angels' powers.
Yet the angels that went to repel Beelzebub in his flashback didn't seem to be that great and went together with the army of exorcists that got annihilated.

Maybe at some point, but it doesn't seem that they do now. In the flashbacks where they angels they seemed to all follow Lucifer just for being Lucifer. But after becoming demons, it seems that each of them degenerated into just indulging into their own sins/desires and are at best are cordial to each other as past comrades. But they are not above just stepping or destroying each other's vessels.

I think it's because Lucifer's decisions and actions written in God's plan are actions that he would've come to on his own volition. He could just refuse to do what's laid out on the script, but then he'd be missing out on his own best bet to rebel against God. And since Lucifer only has an excerpt, he doesn't know if doing so would just be accounted for in the rest of God's plan.

Because he's utterly broken after having perceived the totality of existence without having the faculties to properly interpret them or cope with that fact. Unrelated to the story. I always liked the idea of an eldritch being intruding into such a world and throwing off God's divine plan. If God is omniscient and omnipotent then he would know and be able to prevent this from happening unless you consider those things only being true within his own world. Then again he still would know it happens if you consider that he knows everything and exists everywhere and always.
It really depends on your take on a lot of these concepts. But I would like to see the closest thing to perfect and all powerful still being fucked over somehow (without ass pulls tho). Nothing gets me off more than God being fucked over. It does require outside intervention tho otherwise it's an asspull.

If you don't understand how that works then just read The Watchmen; that scene where Dr.Manhattan tells the girl "You're about to tell me something and it'll shock me", he already sees it ahead of time by ages, but actually seeing it play out for him is different, even if you know its going to happen it doesn't change your feelings about it happening.
Ultimately even if this is the outcome Lucifer saw coming, he had to play his role because this is what was necessary to create Father who became a demon lord, this is the script from the start.
