I'm not sure if I just don't like mecha or if I'm watching really bad ones
So far they're just poorly animated and formulaic, with no characters or story to speak of
I was promised exciting, hot blooded adventures of true courage but what I got was complete boredom

Those are all series for younger children with largely episodic content which may not be everyone's kind of beer. The format was the norm for most of the 70s but it diversified after that.
Eldran series (Ganbaruger, Raijin-oh) or Braves (J-Decker) were an attempt at reviving that format in the 90s.

It was made by the staff that produced the legendary Giant Robo OVA series but you can watch it without having knowledge of dozens of Mitsuteru Yokoyama series.

Shows/projects like Ghost in the Shell: SAC, Valvrave, Full Metal Panic, Yukikaze, and Darling in the Franxx are also mecha. They're as mecha as stuff like Votoms and Patlabor. I'm not saying that these are good shows and franchises, to be clear.
