Jambalaya is just low range NP attack. The heart effect is irrelevant in most scenarios as by default every NP attack aims to kill you.
You cast Jambalaya > Hit > Death
You cast Ass Destruction Spear > Hit > Death
The only difference is that Mambalaya can touch you everywhere for it's effect while Ass Destruction Spear can technically fail to kill you if it hits your toe (- leg I guess). Plus different range NPs have different projectile speeds. Mambalaya has no auto aim and homing capabilities. The curse effect is also trick because you don't really kill target but swap hearts very fast.

No, they're way stronger than these skeletons. They're fairly useless vs servants since you'd have to trade most of them to have a chance at winning, but it's an assassin class - they can just kill the master. If you sent 20 of them most servants wouldn't be able to stop them all, you'd need some strong defense magic like Kayneth's silver slime or insane CQC like Kirei to survive.

Well I guess you can utilize them for sucker punching while others fight. It is still awful giga low tier servant. You would pick it in grail game unless you're low tier whore master. The inability to defend themselves and even your master is big issue. Like in pvp video games rogue need tools to deal with direct combat.

Actually they do , tho it requires:

For example, just immagine what kind of threat would’ve been 100 face hassan if summoned by Kiritsugo instead of Kirei.
Yes, they won’t match the other servants in pure power, but an army of trained sneaky assassin under the at time equivalent of Mage Batman and his preptime = unironically he would’ve faired better than how he did with Artoria in most of the scenarios
