I've never watched Fairy Tale but it's still going isn't it?

What makes it a ball drop?
Is it when the plot goes full crazy mode?
Is it when the whole story changes to something different?

This anime completely missed the point entirely. They should have never revealed what was actually over the other end of the wall. Isabella should have been vague but fearful of what she's seen on the other end of that wall which is why she keeps the children on the other end of it at the cost of having to exchange one child every year when it's time for them to "be free from their mortal coil"

Because by the time they make it to the other end of the wall it then becomes every boring generic isekai you've ever seen. Season 2 should have been about either Emma being the lucky one who got over the wall and lives but everyone else was stuck behind or everyone else got to leave but the tradeoff was Emma stayed behind. Everything beyond the wall isn't important what's important is that they breach the wall together as a group and then end it there. See promised Neverland functions better as a movie then an actual show

Yeah once they got over the wall the entire story had to pivot to something else. I think it's possible that they could have kept up the suspense and made it decently interesting if they continued to keep the threat of what's really beyond the wall really vague for a long time, but ultimately the story should end with them going beyond the wall.

Isabella functions better as an antagonist who is well aware of being an antagonist instead of having to be an antagonist because the plot needs her to be. The idea that she genuinely loves the children but is more concerned of the collective safety of all of them vs one child needing to meet his or her unfortunate end for the grander good of everyone else reminds me of Logan's run which followed a similar principal. If Emma burned down the house and escaped, Isabella is suppose to tell the children that hardship they will now experience is Emma's fault but if it's the other way around then Emma needs to be punished for letting all the other children escape and the punishment is repairing the mansion while they "locate" all the other children
