I know a couple of great ones like Joe Hisaishi, Yoko Kanno, and Hiroyuki Sawano, but I'd also like to bring up Evan Call. Possibly gaijin bias, but I really like his Violet Evergarden compositions; plus he has great taste in music (he cites metal bands like Blind Guardian and Rhapsody as influences).

Wait, seriously? I'm a huge Blind Guardian fan, and while with the exception of Symphogear, I don't care for any show he soundtracked, that's actually really cool.
Fun fact: Blind Guardian did an ED once.

I find most anime original music to be pretty unremarkable, but kevin penkin's stuff in made in abyss S1 was pretty good and then keichi okabe's stuff in summertime rendering was memorable, but maybe just because I recognized it.

The crowd chant to Valhalla is amazing. You can tell they are really passionate about the themes they sing about.

What are your thoughts on Kamelot? They are my favorite band, preferably Roy's work from Fourth Legacy to Ghost Opera. Epica is my favorite album by them.

Penkin for how hybrid the soundscape can be like in Alita https://www.youtube.com/watch?v=cyym68X9HCM He can make some complex compositions too, which is a nice break from the constant plugnplay 'i know music theory but don't know how to break it's rules' shit that's everywhere now.

Gin Hashiba, this whole OST, the OP and ED of this anime are pure bangers: https://youtube.com/playlist?list=PL4nrj7eThMeFQROdSuVFXTgK9jRKIyvjP

Don't know if they count but most 07th visual novels have top-tier soundtracks, but I don't think a single adaptation has used those OSTs, instead they have music by the guy who did the OST for Patlabor.

Why is it that legendary video game composers are working on anime these days?
Dungeon Meshi has Chrono Trigger's composer, Nyaight of the living cat has King's Field composer and the upcoming Witch Hat Atelier anime has Dark Souls' composer
