If they never sacrificed their guys, Leopold would've taken a different route and that would be the end. But he chased them and believed this was their last men into such a obvious trap. The rush to finish and underestimating them really blinded him because he could've seen how narrow the pass it from elevation but his eyes focused entirely on what appeared to be cowering rebels running away.

Yeah the bait had to look believable as "the last of the army", 200 people was the minimum.
They also needed to wait by the start of the trail to lead the knights into running ahead without thinking about it too much, that's why they had to all run while leaving behind small groups to keep baiting the cavalry.

Eh, this is a bit early to label as the end of knights. Here they just fell for a fairly simple trap and waltzed onto literally the most unfavorable terrain imaginable. It took another century for knights to really start declining broadly.

Depends on your point of view. Knights and chivalry puts a cap on the overall volume of violence perhaps, but it's also placing a steel boot on the necks of the peasantry. Men like Wolfram are allowed to exist when the nobility take their monopoly on violence for granted and become too detached.
