So how is he gonna balance out his ever-growing S-Rank monster corpse collection and mountains of cash? I think he needs to have more of a reason to spend all that money so he can stop going down the Rimuru or Farming Isekai path. At least it's partially mitigated by Sui and Fel's endless stomachs. But it still becomes a problem when even the scariest monsters are no match for them. Kinda kills the whole ecosystem the world's built up.

Personally hate this one the most out of the dozen or so Isekai I've been exposed to, simply because it's probably the 'least internally consistent'.
The setting is supposed to have an economy built entirely off of hunting monsters, I think at one point they even said they didn't have domesticated animals like pigs or cattle, but then absolutely fucking NOTHING resembles that reality. Everything in their world is "normal cookie cutter western fantasy stuff": armor, clothing, weapons, buildings, roads, nothing actually looks like it's made out of monsters, nobody looks like they hunt monsters for a living, it's insipid.

I think the overarching dilemma is that the dude wants to stay in permanent vacation mode, but is fighting the fact that he has two (one more on the way) bodyguards that are OP, and that paints a big target on him. Nobility and the masses will constantly pine for him, 'cuz he can technically hunt the deadliest monsters for their meat and parts. He also seems to genuinely enjoy cooking, and I'm surprised he doesn't develop a skill relating to it. Even if he DOES love cooking, he definitely needs help with it when it comes to feeding his monsters' vacuous stomachs. It's a matter of time before every kingdom tries to catch him again and coerce him into servitude.

I imagine that's MAPPA and their executives' fault for not helping realize the world the author envisioned. That or the author themselves don't really sweat the details. They just wanted to write a "comfy, cozy" story with a gimmick after seeing the dozens of other isekai around them.
