Frieren only went there because it was kind of her duty. Pretty much any of the exam proctors would also have wiped the floor with him and the world should be filled with mages that passed the exam and would handle him easily. Frieren doesn't even stand a chance against that one human that tried to kill her. Old weak/new strong is a major theme of the show, might even be the whole moral of the story.

the only reason he was defeated so easily was because he was 80 years out of date on human magic and frieren caught him by surprise with all their advances (like the human magic shield that was specifically designed to counter him as well as the demon zoltraak that was specifically designed to kill him as well as their new found ability to fly).

Frieren only saw fit to teach Fern Zoltraak and no other combat technique because she deemed that it was all Fern needed to defeat any opponent in her lifetime
their present day world is relatively a time of peace so there just isn't much development in combat magic and fewer and fewer people are even becoming mages at all
