A lot of good gag manga rely on timing and clever paneling. Lazy anime directors struggle with it. Jitsu Wa and the first season of Golden Kamuy are 2 other examples of anime failing miserably to convey the gags and often inserting some of the laziest "comedy" thinkable.

even without the parts that the anime cuts out, the story just keeps building on itself until the end, everything makes sense and circles back around to the concepts initially set up at the start of the story.
if you like the first arcs you will like the story as a whole

The anime was super rushed because they tried adapting way too much and it ruined the comedy.
It's not really their fault though, the manga starts off with a couple of short arcs followed by a big multi-volume arc so the pacing would've been fucked either way.

The crazy thing is the manga started out as a joke submission with no actual overarching story planned out. The mangaka literally made everything up as he went along and constantly had to rewrite stuff for the first couple of volumes in order to avoid the axe.
