I genuinely hate the fact that every modern day anime fight scene is a fuckfest of effects, colors and the camera spastically and retardedly moving around the characters. It's a way to jingle the keys in front of the audience and make them think that the fight is more impactful and important than it actually is.

I think this is partly missing the forest for the trees. Even when modern-day cameramen try to do slow panning shots and whatnot, it still looks bad. There are two main issues. One, that nobody bothers doing still shots from strange / dutch angles any more. Floor shots, ceiling shots, etc were all way more common before.

Second, and way, way more important, is that anime used to be shot with ACTUAL CAMERAS. When you zoom in with a fake camera, you're just linearly scaling the image by 200%. When you zoomed in with old anime cameras, you were physically zooming in on the animation cell using the camera lens. This creates a completely different effect, especially because there's natural judder, shaking, easing, and settling as a camera physically moves into position. Old panning shots, zoom shots, and focus shots (when something blurry in the foreground/background gets focused on - this shot isn't seen at all in modern anime but was very common when you had a physical camera to work with) all had a very distinct, appealing look to them because it was necessary to physically operate a camera to achieve them. Modern camera operation is flat because there is no attempt to replicate that look.

Modern day animators don't understand that the cameraman himself is a character and that he needs to be well-animated as well.

I might understand the direction fight scene choreography went along with, which lead to this hyperactive style. If you think about all hand combat fight scenes more or less stem from classic eastern movies, which, while often performed by masters, were rather stiff in their presentation. This was more or less copied to anime. Not only was the eye of the viewer used to that style, but it was also pretty cheap to animate. Then productions got bigger, staff got more experienced and unknowingly we hit some kind of sweet spot with complex and artistic fight scenes, which still used the classic eastern setup as a foundation though. Upon further iteration that foundation was eventually lost and the more complex fight scenes were used as a basis for further development. Well now you have nowhere to go besides faster cuts and almost doped choreography. It simply was the only direction to further go, if you want to do something different. It's not pretty. But it's pretty understandable. I still miss the old stuff though.

The Popeye fight looks better, simply because you can actually follow, what's happening on the sceen. It seems like this simple revelation is sometimes lost on modern directors. A movie / a series is a communication instrument. If your recepients can't decipher it, it's worthless.

no that's because those animes are adaptations of mangos drawn by people on schedules. a picture is worth a thousand words but it's way easier to draw a panel of some character explaining what's going on than a bunch of panels actually showing it, especially when it's some kind of ass pull that you wouldn't easily notice to begin with.
