The concept of settling implies that you're could do better. If you could do better why are you with her and not someone else? As far as you've presented the facts for me you have a solid girlfriend. I'm not saying that she's perfect, but you're compatible, like the sex, could live together and she's emotionally mature. Did you want her to be a 7? Besides that you don't have to marry her straight away or at all. You're really only unhappy because of your own standards. This really only comes down to whether or not you're ashamed or uncomfortable to have her as your partner.

From what you say it seems you have found someone who accepts you by who you are and loves you unconditionally, but you sound like someone who wouldn't be able to find another person like that and you'd probably run into the same problems.

The rule of thumb advice is that you should dump her. She is capable of loving others so she will be fine on her own, but you sound like you're too picky to deserve a relationship. The burden is on you to find value in her because she's in a one sided relationship and you have to figure if she's what you want. If you don't want her then staying alone is the alternative, figure which is preferable.
