I don't have a recipe for stew, I just go by whatever I have too much of and feels right in the moment.
Nine times out of ten it turns out great.
Overthinking is dangerous when making stew.

If you are wondering though, most of them are basic beef stews with potatoes and carrots.
Simple but good and no way to go too badly wrong when changing things up for taste.

I also make ribs/pasta sauce in a similar fashion.

>saute veg in the pan
>add cut up pork ribs
>fill to the top with canned tomatoes
>stew for at least 3 hours

It's really good and cheap. You can get a whole rack of ribs for like $13 and it feeds you for a week.

It's just a hearty, warming meal that is also typically cooked for quite awhile (generating heat the entire time), and so for those reasons it's not high on my list of summer meals. I enjoy a good stew, but it's a fall/winter sort of meal for me.

Carrots, potatoes, parsnips, turnips, mushrooms, onions, shallots.
Brown the meat and set aside.
Finely chop the onions, add the shallots (whole) and saute until soft.
Add tomato puree and fry together.
Add the red wine and a little red wine vinegar and bubble gently to boil off the alcohol for 10 mins
Add the meat back, plus the vegetables, 3 cloves, 2 bay leaves, some coarse ground pepper, tablespoon of redcurrant jelly, few sprigs of thyme
Top up the casserole with beef stock
Cook on 180 (fan) for about 2 hours
Serve with crusty bread to mop up the unctuous sauce

It is a favourite of ours. You can use whatever vegetables you like, but in my opinion the carrots and parsnips are essential. I can’t always get turnips, I'm not keen on celeriac but some swear by it, I tried Jerusalem Artichoke but wasn’t that impressed
