The traditional engineering fields (mechanical, electrical, chemical, etc) are just as brain demanding or more as software engineering per example, yet earn half as much because they are just not as central to the oligarchic core sectors (law, finance, big tech as you said, but also big pharma and medicine).
All the core fields of the current oligarchy are based on exploiting the weaknesses of the individual.
Big tech uses your data to predict ways to influence your brain and condition you to take certain actions, buy certain products, adhere to certain ideas, etc
Big pharma and medicine exploit the growing number of illnesses, both physical and mental, that the modern person suffers due to the unnatural nature of modern society. And, if you are not ill, they will still find a way to make you end up on some medication.
Modern big finance (private equity, quant firms, etc) are all based on exploiting the economic system in ways that are completely unreacheable for the individual and generage insane ammounts of money despite providing absolutely no value to anyone outside the firm, which goes against the basic premise of capitalism.
Lastly, big law is the shield that protects the oligarchy from the few institutions that are still somewhat at the service of the people. Their entire job is to bend reality as needed to make sure that the house always wins no matter what.
Jobs that simply provide a product or service that doesn't exploit human weaknesses just can't compete against the demonic leviathans that control the modern world.
