There are a bunch of use cases that no one has built because there is no clear way to monetize it and there is no clear regulatory way to use it, e.g. onchain identities (maybe using some zk-proof like railgun/tornado for privacy).

You can do that now, a PAXG/XAUt Curve LP position pays ~1.5% a year. Also AAVE will soon aid XAUt, so that's another source of yield.
