That's a hardware wallet, not a cold wallet.

If you have your seed on a cold wallet (a physical, non electronic medium not connected to anything) then no one is getting that unless they physically break in and acquire it. Which can happen but is way less likely than some jeet or NSA exploiting some zero day exploit to open up Bitcoinseed.txt or your computer dying or flash drive getting wiped.

You can add additional parameters to the cold wallet like "it should be durable and able to withstand a fire or flood" and "it should be secure enough that someone actually has to want to be obviously bad to get it" etc. but yeah a cold wallet is obviously safer.

In practice, house fires burn hot enough to render your crypto steel wallet illegible, bank employees/the fbi have raided safe deposit boxes for private keys, some hardware wallets have backdoors, some hardware wallet companies have issues with keeping customer data secure, etc etc. There's no "best" way, just pick one that you're comfortable with

Open source wallets cannot do this without getting caught. Ledger's secure element is closed and the back door is garanteed in order for the recover function to work. Your' better off using something open source like Trezor or going full autism mode and using a fully airgapped device.

open source is not inherently more safe. zero day exploits can still exist. no one reads the source code and tests it intimately before using. you are appealing to the authority of anonymous nerds who owe you nothing online to find issues with the open source project. and hackers who are motivated to understand the source code or provide support for open source projects know exactly how the system works.
whereas with ledger you're trusting they will only allow the US government to backdoor into your wallet.

for somewhat small amounts these hardware wallets are great. everyone should have one and keep maybe .1 bitcoin on it.

for large amounts, whole coin+, you are unironically safer on an exchange with state backing and cold-storage certification such as Coinbase. This is a problem for people whose coins come through various degenerate schemes like gambling but for a normal person who purchased the btc on Coinbase in the first place this is the most secure place to store it at any given time. It's basically the same as having your money in a bank account instead of in your wallet.

hw wallets reduce the odds of malware on your computer exfiltrating your private key to an attacker. they don't make it a chance of 0% but they get stupid close.
hw wallets don't protect you at all from
