It's just a description of how people react to different stimulus. It's been over a decade since I took the Meyers Briggs in a college industrial engineering course, but isn't it essentially a series of specific scenarios asking your preference/how you would react and then at the end it just tallies up your results for a generic description of said preferences? That's all it is and you getting different results every time just means that you don't have strong preferences and react to things differently depending how you feel in a given moment.
e.g. imagine a survey that's like:

Doing a questionnaire is a pretty shitty way of actually testing for your MBTI as the questions are straight up retarded, require a degree of honesty&introspection most people don't possess, etc. etc. Personally I sometimes use ChatGPT as a diary to reflect on stories I experienced or recent events that happened to me and then I'll ask it how my thoughts and actions potentially relate to my MBTI type and I get a different result from the questionnaires. But with ChatGPT I'll always get the same result.
