how does one get somewhat big amounts of money out of paypal without triggering tax stuff?
im from the eu, receiving payments for freelance works through paypal friends and family how can i take the money out safely, could be around 100k/year. i've been buying some eth through paypal directly to coinbase casually too

Paypal reports your account directly to tax authorities. There is no "without triggering tax stuff". Paypal will report your EOY earnings to whatever tax authority your under at end of year especially if it's 100k a year.

I live in slovenia. The only info Paypal has on me is my email address and nothing absolutely nothing else. I withdraw USD from my trading account on to paypal and send it to revolut. Then I just visit an ATM and withdraw 2k euro cash daily. no one can touch me

I think in 2023 slovenian tax department wrote an article that they collected something like 700.000eur in tax on trading CFDs and stocks. I mean, maybe put it all into an asset, like metals or stocks, and then loan against the asset? The year over year interest should cover it, and the debt is deductible. But other than that, I think there is no way to do anything with PayPal anymore

Start a company, make up some bullshit service your company is selling to yourself through paypal payments. Then use the company to buy stuff you want to company and remove stuff you are buying in company taxation as necessary expenses. Also check the local laws which kind of services have the lowest VAT and "provide" that service, and then ask VAT returns due stuff your company bough.
Also remember to pay dividents to yourself, as those usually have minimal taxation.
