If someone knows your name is Rufus Doofus who lives at 69 Nigger Street in Harlem, NY whatever zip code and in your basement you keep a safe with the passphrase to half a million dollars worth of bitcoin in there and the seed phrase is just written as-is, someone who can remote view (or can't but trains to be able to) can theoretically steal your coins. I don't see why we should assume there is some special protection around it by protector spirits. However, one simple way to fix this problem is to mess with the seed phrase a little bit AS LONG AS YOU REMEMBER WHAT YOU CHANGED. I did this just in case my house got robbed and I almost lost $700k at the time, forgetting how I changed my seed words. I remember now (how can I forget now), but I'm not trying to sneakily tell people how to lose their bitcoins so that the value of mine go up. I just think this is a genuine concern no one thinks of, yet, because the world isn't really "up to" that. Fortunately.

The CIA said it wasn't reliable enough, so I doubt they could get every word

That was their cover story because they wanted to discourage the soviet union. In fact, even faraday cages and lead containers don't stop remote viewers. What does stop them is messing with the seed words a bit (replacing one with another BIP39 word, switching two, etc). Apparently they can't intuit what you did for some reason.

Instead of performing a risky alteration to your seed phrase, you could simply protect it with a magic spell

Does that work? I feel like if I did that the remote viewer could just force their way through if they had more willpower than me or something. I don't know how protection spells work.
