What seasoning mixes do you keep in your pantry? I mostly only keep to just having individual seasonings like a bottle of garlic powder, a bottle of black pepper.

Every time I try some sort of mix that seems tasty it always ends up having some terrible ratios, pic related had too much salt.

Same, but I made some onion crisp this weekend that turned out pretty good - itโ€™s just toasted dehydrated onion and dried minced garlic in hazelnut oil.

Used it in some fried rice tonight and it was very yummy.

i also don't use any almost mixes, mostly individual. only actual mix i have is garam masala for indian food, which is basically just raking the majority of your spices into one jar, so i keep one premixed to save time.

>>celery salt
not sure on this exactly, but celery seed great for some soups / broths. definitely recommend trying out
>>cloves
i toss a few into the rice cooker with basmati rice sometimes.

I used to feel the same but I really like the element it adds to birria and pho (aka watered down birria) so Iโ€™ve started using it recently

I don't keep seasoning mixes. In the first place, I avoid pre-ground spices. I grind up everything fresh. Pre-ground spices taste like fucking sand especially when you buy them from a store where they've been sitting in warehouses for half a year.

Most of my meals are some sort of meat cooked in a liquid so I often just drop in whole spices (bay leaves, allspice, cloves) and grind up some black pepper and a few other spices depending on what I'm making.

Cloves are so good for all sorts of soups and meats. I always add them to my mushroom sauces. Also good for apple deserts like apple pie and such. They pair well with cinnamon.

I have salt of different kinds because I bake. I have regular salt, fine sea salt, and kosher salt. I have a black pepper grinder, garlic powder, mustard powder, onion powder, cayenne pepper, and some smokey paprika. Also I just recently picked up some celery salt for my smash burgers. I also have ground cinnamon because I bake. All of it gets used pretty regularly.

Mortar and pestle is the goat kitchen equipment. Cavemen had it all figured out, just bash and grind rock together to extract maximum flavor.
Though I do cheat on mine sometimes with a spice grinder, I make my own chili flakes and go through a lot of it, it was getting cumbersome grinding it down with a pestle.
