I'm making these croquettes but I do not have onions for the bechamel so I'll be using dried onions and green onion for the milk.
I'm gonna do bacon, sharp cheddar, and parsley with some of the 4C pecorino bread crumbs. If the thread is still alive I'll try and update but otherwise what kind of croquettes does /ck/ like?

I've made croquettes exactly once and my filling was too wet so shaping them was a fuck.
they tasted incredible, but deep frying at home is too inconvenient to be worth doing often
