Is it worth it to save the fat from skimming a stock? I was always told that is basically all the "off" flavors.

Final product after skimming, straining, reducing.

I only have one of these guys left. I was thinking of roasting some oxtail and chicken feet and simmering for 4-5 hours to make a pseudo veal stock.
