Sometimes you have to ask for what you want in life anon. Butcher shops already do a lot of custom orders because it's just not reasonable to have every single possible cut of meat on display. They are typically happy to sell you butchery products too, obviously depends on the place, but I've gotten niche stuff like this before by asking for it.
