Did it matter? Pretty much everyone in the "First Class" that wasn't already a hold over from the previous trilogy was purged in the next movie except Havok who had one scene. And then he too died in the movie after that.

This is easy to miss in the movie, but all the mutants that Charles and Erik recruited couldn't control their powers or have not yet discovered their full potential. Even Erik had issues until Charles helped him to get rid of the negative feelings that kept him stuck.
The x-men we see in the first movie have been training with Xavier for more than one decade, that's why they're capable and that's why they're part of the team in first place. In X2, it's implied that the older students (Bobby, Colossus, Pyro) have a better control over their powers than the kids who get captured and perhaps have just been active for one or two years.
Darwin probably wasn't yet able to explore how much his body could take. Also, having adaptability doesn't mean you're immortal.

At the time, they were going to do their own thing sepparate from the past movies, Deadpool wasn't announced, and Wolverine was presumably just going to be a in solo movies. Singer coming back to do DOFP changed everything.
Darwin's survival has the gimmick that it's adapting and changes him visually, not just regeneration. So it's a separate niche.
