their issue was trying to adapt Genndy "The Russian" Tarkakovsky's pig-hideous superflat overly geometric art (The man can DIRECT, but his drawing ability is scarcely above Butch Hartman) into cgi with zero changes to fit the new format or repair his Russian ways.

I just don't think of anything after her leaving the order in S5 as true Ahsoka, because that ending works so well for not only the character, but Anakin. Council gives Anakin a Padawan to mellow him out and teach him to eventually let go of someone in a healthy and happy way, instead the Council immediately turns on her when something goes wrong and drives her away, giving Anakin yet another loss and another reason to resent the Council.
Rebels is a fun show and definitely got better over time, but never reached the peaks of TCW, S7 was mostly a waste of time and Ahsoka suffers, and the Ahsoka show just shouldn't exist.
