Superboy isn't really forgetable - just that it was not available. To start with, it was syndication, so people remember both Lois & Clark - the New Adventures (which was on ABC) and even Smallville (even if it was on The WB originally) better.
The rights were so fucked up for years that the cast could release there own VHS copies of episodes, which they sold at con appearances, until that changed. And even then, largely because the rights (e.g. who profits) are still a bit fucked, it's not something that was ever thrown on HBO Max even when they were the only home for live action DC. Smallville became largely popular from relentless rebroadcasts on cable (TNT or TBS, or one of those) and since then, has remained on HULU, where they keep paying the licensing fees because it remains popular.

I'm going to say Amy Adams was worse because of one thing in particular. In Superman Returns, we are *shown* that Lois won a pulitzer prize for her article on if the world really needs superman; we literally see the award on her desk.
In Man of Steel, Lois *tells* the audience that she's a pulitzer prize winner in dialogue, and we don't know why or what it's for.
The fact that so much of Adams' Lois' dialogue is expository like that is just bad writing.

Amy is a great actress and actually the Lois investigation story was one of the more uses of Lois in modern adaptations, but she was otherwise wasted in every other follow-up and really all of the dialogue and script was just a shit show on all The Hack's movies. Also, it's absurd to blame Adams for a bad script or bad dialogue, unless you meant her performance of it was perfunctory or pedantic or boring or unbelievable or some other issue that you can actually say she is responsible for.
I do agree she was miscast, otherwise, but that's true again of a huge amount of the casting by the Cult Leader. She had minimal chemistry with Henry and she was also, unlike Bosworth looking like an intern, Amy's Lois looked too much like a Mom or a school teacher on her tenth decade, etc.
