Pomni is borderline irrelevant to the plot after episode 1 She exists solely to ask questions the rest already know for exposition purposes or to be a shoulder for the others to cry on

It's a digital world, Caine doesn't have to alter his mind for that, he just has to make it so Jax can't run an eating subroutine with any food object labelled as meat or dairy. Jax didn't enjoy being a vegan so his mind wasn't altered.

This. It could easily be classified as a status effect in a video game. A vote was done for Zooble to be turned into a slug, so the option was for others to be changed too, not just Jax. But nobody else took advantage to push for a successful vote. Bit of a missed opportunity really.
On the slug note, some people comically misheard Jax as saying he was voting to turning Zooble into a slut, which would have made for an entertaining direction for the episode to go in had the vote gone through.

One can work a theory that jax or his family worked on her farm and now that he's heard ragatha's backstory he's piecing it together. She disappeared from the farm when he was younger, so she doesn't remember him at because she didn't meet him, but he knows about her because it would be unavoidable.
