Ratatouille had such a "happily ever after" ending with running the restaurant. And Remy doesn't have long to live anyway.

What are they going to do with a Ratatouille 2? Have a health inspector come in and shut down the restaurant because he finds rats and feces? Maybe Linguine runs a food truck?

Colette and Linguine aren't even all that appealing as characters. And I don't even want to see them again. I don't even want to see a story where they get married.

In the sequel, Remy will meet a strong, badass rat girl who doesn’t need no man. She will teach him that there’s more to life than cooking, which causes Remy to renounce his career as a chef and part ways with Linguini and co.

There will probably be some sort of conflict in the Rivera family. Maybe a divorce between Miguel's parents or a fight to sell the house. He goes to the afterlife again for the sage advice of Coco.

I don't really want to see a Coco 2. Elena of Avalor already has 3 Dia de Los Muertos episodes. Miguel going to the afterlife was supposed to be a once in a lifetime isekai experience like Alice going to Wonderland or Dorothy going to Oz.
