The original joke was Nord x Dark Elf but then became Nord x Beast race because of stuff like the in-game stones describing a khajiit woman who was a great cuddle cause she was always warm and Elder Scrolls Castles having a Nord jarl cheat on his wife with a khajiit maid. Argonians were just lumped in cause people think they're cute which they are.

You can marry an Argonian lady in Skyrim, and I think most players just default to playing as Nord so it kinda fits.
Also apparently ancient Nords loved cat ladies.
