Really, if something as simple and nebulous as an art style actually manages to attract complaints from large groups of people, maybe one should look inward and try to maybe do something that is attractive to a wider audience and generate less negative word of mouth?

It's not really any cheaper or easier to work with in 3D. It really tales almost exactly the same amount of work to model the bean mouth, rig it, and animate it as any other shape mouth Pixar has used in the last 30 years. It's not really a fix at all for them.

It's only a fix for 2D rigging. It works super well to have a quick oval drawn in about 12 or so different shapes and then rig them to animate. For 2D it's a huge quick and easy solution that definitely saves money. But Pixar, it's not. Also Pixar does not really need to cut corners in that way when the film budget is already higher than $200 Million. It's a conscious choice on their part.
