Spider-Man's love life is kinda like Wonder Woman's. Sure there are long periods where they aren't with either Mary Jane or Steve Trevor, and they've had other love interests in the comics for ages, but the two are seen as the iconic, natural romantic partners for each character.
So every adaptation, looking to keep things simple and avoid getting bogged down in obscure continuity opts to use them as the main love interest.
