Fish was one of the earliest ingredients on pizza, owing to the whole "invented near the coast" thing. Anchovies are already topping-sized and salty enough to complement everything else. They're a natural choice.

Haven't had it, but I always just assumed anchovies were just MSG bombs that might also be salty, which sounds fine to me. Most of the anchovies I've had/used in things that aren't pizzas were basically that.

So I went looking for this book, and it is impossible to track down a coffee apparently it's a nimac book and it's paid for by the federal government. It seems to be a foundational book part of a series, I was hoping to track down a pdf with better pictures
