By pure chance, I ran into the Arthur subreddit. What I find strange is that they always refer to Arthur's Mom and Dad as "Jane" and "David" without ever wavering. Am I the only one who finds this odd?

That's probably the least odd thing about the Arthur fandom.

that's pretty typical actually. people will either just decide on names collectively as a fandom, or they'll be from some obscure thing, or particularly in the case of last names where no last name is given, they'll hear the family referred to as "the (noun)s" and pretend either seriously or jocularly that that is their last name
or in the case of Malcolm in the Middle, they use their last name from the original script pitch.

David and Jane are their actual names and have been said throughout multiple episodes. Muffy's father is named Ed. Francine's father is named Oliver. Ratburn's first name is Nigel.
The adults referred to each other by their names pretty often throughout the show.

It is like if Andy's mom in Toy Story was called "Mrs. Davis" by the fans or if her first name was namedropped once and then all the fans caller her "Amanda" instead of Andy's mom.

We see the character through the prism of the child characters. If I were to refer to an Arthur episode to a random individual, I wouldn't call the parents "Jane" or "David". I would call them "Arthur's Mom" or "Arthur's Dad".

You were on the Arthur subreddit though, which means the people there are obviously going to know who people are referring to when they say Jane and David.
And again, there names weren't "rarely" mentioned. The adults interacted pretty often throughout the show and were constantly using each other's names, so to anyone that actually watched the show this is common knowledge.
