I wonder, would you watch a show that is a "fake videogame"? for example I saw there are tons of fan animations of Undertale and Deltarune that use the assets of the videogame to create fake gameplay and cutscenes.

Could work, but you mean like, getting assets from an existing game and then making a series out of it, or making the whole thing from scratch to make it look like it comes from a game?

There were some now-oldish examples of the former being done, like all of those Mario animations that used assets or modified assets from the games. Those were common in the late 2000's up until mid 2010's.
