Is uni-sex even a thing in cartoons anymore? Back before the 80s all cartoons were uni-sex but by the 80s they started to make cartoons that were only for boys and only for girls and while uni-sex was still a thing in the 80s and 90s by the 2010 they seemed to have vanished; What happened?

I'd say it's marketing and demographics research getting too big for their britches. "This show polls well with 18-25 women, let's include something that specifically appeals to that group". Things made for general appeal likewise end up made for mass appeal, so you end up with pablum like We Baby Bears -appeals to everyone yet no-one.
The premises of what you're calling "uni-sex cartoons" were much simpler. A variety show with talking animals. I am not a fan of it myself, but arguably Hazbin Hotel's fans don't seem skewed towards one group or the other, because it's focused on the premise, not what types of people are we going to corral as a corporate audience.

The definition of how “uni-sex” appeals to people.
Male character leads have the opportunity to be uni-sex. Men or women can wear merch with men on it because society said it was okay to. whereas female-lead characters are stigmatized to only be for girls. Men can’t wear merch with females on it without being labeled creeps for it.

Im just reminded of the survey Craig McCracken did with a group of boys during the powerpuff girls and he asked them who all watches the show and none of them raised their hands, but he told them to put their heads down so no one could see them and asked them to answer again and they all raised their hands.
