That's because it isn't really a religious holiday (in the sort of sense that passover or rosh hashanah or purim is), it's a historical memorial. It gets bigged up in popular culture purely because it happens near christmas.

Largely when Vaudeville was the main path towards being in movies, especially comedy. 60s-80s almost every comedian was jewish with Vaudeville roots of some kind. There is really nothing to write about for a movie. There are no fables or colorful holiday mascots to use, no decorations or songs, it's impossible to make something out of it to compete with Christmas movies in the same month.

At the same time, you cannot add any of that shit either. Jews obsess over never ever adding in mythical colorful crap like a holiday mascot like everyone else and refuse to acknowledge anything like a Santa Claus or Tooth Fairy.
