I recently encountered fittings that look a bit like pic related, but they had a hex opening the pipe went into. The pipe itself has been threaded elsewhere, so I'm not sure if the shape is because they've been screwed on... there's no solder visible either.

Anyone know what they are?

I don't have a (working) camera, and have never owned a cell phone.... Yep.

The piping is all 1 inch copper.

Two options I can think of is the nut variant of a compression fitting, where you tighten a nut instead of pressing the fitting on, or a solder-to-thread/press fit-to-thread adapter fitting.
