In a few weeks I'm embarking on a 2 month trip across Australia and New Zealand. I don't know for sure but my impression is that these places are way sunnier than where I live (Midwest USA) so I need to get a serious hat as I feel the standard trucker cap won't do.

The thing is though, I'm bald and I don't want it to look like I'm coping or trying to cover up, and I have no idea what kind of hat sends that message. Panama hats seem the most universal but I don't know. What do you guys suggest?

A Panama hat is usually fine anywhere for warm or hot weather. Even those who complain about the perceived colonialism of those styles aren't the majority anywhere in the world. Some people might get upset if you decide to wear a pith helmet, though. In general, while virtually any kind of straw hat is safe, if you are serious about a fur felt or wool felt hat, try to look into the Akubra or Stetson companies. Make sure you figure out what your correct hat size is, as it is better to be slightly up by one size than below your ideal size. Akubra leather sweatbands (interior hat band) shrink slightly, and the Stetson ones a bit less, but all leather inside bands shrink at least a little bit with wearing them, so expect your hat to be slightly loose upon wearing it for the first time or few, until it adjusts itself closer to your head shape. As for the style, look into flatter-brimmed cowboy and outback hats in a moderate to somewhat wide brim if you want to start out with one, or try a moderate-brimmed fedora of around 2 1/4 to 2 7/8 inches in width, even a wider 3 inches or a little over, if you want to, but that gets into the territory of more country sorts of hats like the cowboy and outback styles. A narrow-brimmed hat probably won't be helpful against the sun for anything other than your scalp, so consider the shade of a wider-moderate or wide brim, but probably not too wide, anymore than you are comfortable with for your first hat.

Depending on where you go in Australia depends on where you need a hat, it will be fucking freezing and dreary in Melbourne.

It is sunny and hot in Mackay, Townsville and Cairns (Central and North QLD).

Where are you going in Australia? You could buy an Akubra when you are here if you have a bit of money
