Hijacking, how do you prepare meat so that the middle part is as seasoned as the outside?
I can cook a slab of salmon on a pan so that it has a perfectly seared and seasoned outside but the middle part is bland. Same with chicken, if the breast is big enough it can't really cook on the pan properly so I bake it and the inside doesn't taste as good as the outside
Give me a good cut of meat to slow cook, either in slow cooker or oven. I like a bit of fat, but I dont want it chewy, so cooking longer I hope that it will render down and give juiceness and flavour.
