I'm really annoyed by fluctuating performance when working out. Ofc it's dependent on my daily form, so how do i maximize strength? Does that pre-workout crap they advertise actually work? Do i eat a banana? Or do something else with it?

The expensive stuff is usually good. Alpha GPC increases strength, statistically.

Carb loading probably matters more. Being rested is important, at least with those muscles.

pre-workout is meant to be occasionally used for cutting. Before your workout: banana, coffee, water with a bit of salt/electrolytes.

Are you eating wholesome nutritious foods and tracking your macronutrients and calories? Are you prioritizing sleep? Mitigating stress? Avoiding alcohol? Drinking enough water? Is your programming appropriate for your goals and recovery capacity?
Worry about all that before getting geeked on 500 mg of caffeine

how would you know your performance fluctuates unless you test your maxes every damn session which you shouldn't be doing? are you training to failure every time? you shouldn't fluctuate so much that you can't perform meaningful prescribed resp*sets*%1rm at reasonable RIR. maybe final weeks of a training cycle where you're actually pushing/trying for PRs.
