Your brain learns how to recruit more muscle fibres when performing a lift, how to fire your neurons more efficiently, and so on. In other words, some of that progress won't be reflected visually. Hypertrophy training will probably give you the results you're looking for, although if you're relatively new to lifting you can pretty much do anything and as long as your diet and sleep are also good and consistent, you'll start to see visual progress.
