They are goated
>calcium, B6, folate, potassium, highly available protein (same level as eggs), super satiating, healthy carbs, vitC (if cooked with skin so it doesn't get heat degraded).
If you're gonna eat them often boiling is better than baking to maximally reduce oxalate content. If you have them like once a week you can have them baked/fried. Although boiled will be the most easily digestable and the most satiating, one of the best foods for cutting. White potatoes are better than colored ones because beta carotene is much lower (can be a problem for many people).

i read somewhere recently that if you had to choose one thing to eat for the rest of your life you should choose the potatoe because they have the most optimal nutrient combination from all food.
