Anyone else experience this? Doing an elimination diet really change my opinions on diet.

Also:

>Kind of like a low-level out-of-body experience
Kind of unnerving desu

All of our wheat in the US is """enriched""" with vitamins, minerals, etc in an attempt to eliminate deficiencies in the population. One of the things they spray on the wheat is folic acid. Unfortunately, something like 40% of the country isn't able to methylate folic acid into folate, which leads to inflammation when you consume it, and gut issues if you continue to consume it habitually (as most of us do).
I think you can get unenriched wheat, but it's kind of a specialty product here.

False. You can get unfortified unbleached flour easily.
