Nothing. The whole onions meme started when some company made some autistic food replacer called "onions" named after the movie Onions Green. A lot of tech bro reddit autists started consuming it and so the association between "onions" and autistic redditors was formed, even though "onions" doesn't even contain any onions. "Bioavailability" in this context is bullshit, but it's true that the amino acid profile from meat protein generally is more favorable for building muscle. So, yes, 1 gram of meat is better than than 1 gram of lentils, if you only care about growing muscles.
The problem is that the whole premise is flawed because we don't need as much protein as the meat industry lobby wants us to believe.
You can easily reach the amount of protein (and amino acid combination) you need for optimal muscle growth by eating a combination of plants, beans, lentils, etc.
It's well documented that eating excess amounts of protein is a health hazard, no matter the source of the protein. Also that fiber is good and saturated fats are bad, which means you should probably be eating mostly plants if you want to be healthy.
