there was this guy at the gym doing a fucking any% workout

I do single sets of my whole routine. It's done well for me. It's probably not optimal because you have to take rest days or you'll injure yourself from doing the same thing every day.

Yes it's a coherent fullbody. You don't need a lot of sets when you can be sure each muscle has been taken to failure on its own. Probably should have a chest isolation exercise more targeted at the clavivular head. But the rest is mostly on point for addressing weaknesses in neglected groups and nothing that's going to injure you unless you do it extra stupid.

I often dont even get a good set in if i brace weird, or a bad session in that its super hard to really hit certain fibers in front delts and inner/upper chest imo. I could see the heory behind it desu but seems like too much effort doing all that differen shit in the first place as i usually do like 5 lifts 95% of the time.

Jfc fullbody start at 1x/wk and go to 2x if it somehow lags and thats more intense on your system than 3x bench/mp/incline and everything else grows easier and gets less joint wear.

I have no idea what you're saying. This sounds like HIT babble not the good kind the dysfunctional kind. Good HIT training starts and ends at 2 sets a muscle once every 3-5 days. The only thing to even have discussion about in HIT is lift selection and potential application partials where full reps aren't possible.

When I stopped counting sets and just randomly going through the gym hitting where I felt a calling for punishment, destroying myself with wanton disregard working one muscle to failure, jumping to the next. It could be chaos, calf raises until I feel as though the muscle will split from the leg, moving to a bench and laying down, doing presses until I feel as though I'll behead myself. Skull crushers until my triceps demand respite. Preacher Curls until I feel I've been punched in the biceps by a professional boxer and they tighten in pain. Leg press. Weighted neck extensions. I'm doing it all while in immense pain. I look retarded, I am retarded, I will die doing this but I feel a calling to do it, to be one of the gym retards.

Full body workout. Superset to save time. 2 sets per muscle. Seems fine to me.
