riginal Study Methodology (Holt et al., 1995):
Participants ate fixed-calorie portions (240 kcal) of 38 different common foods.
Every 15 minutes for the next 2 hours, they rated their subjective feelings of hunger/fullness.
The total area under the "satiety response curve" for each food was calculated.
White bread was arbitrarily assigned a SI score of 100.
The SI score for every other food was calculated as a percentage relative to white bread. For example:
A food scoring 150 produced 50% more satiety than white bread over the 2 hours.
A food scoring 50 produced only half the satiety of white bread.
