I also enjoy ground beef, though I usually go for 93/7 for taco meat (and don't drain anything) or 80/20 for burgers and save the songs as tallow. It's easy to keep it in the fridge as needed, or to cook it all up and freeze it, or add leftovers to ramen, etc etc.
If you can find a local supply (try talking to people at your local farmers market), it's even better
