Back then people didn't know much. They eat spinach, see that the blood flow significantly improved. Assume it's because of iron. They had no idea what nitric oxide is and why nitrates in foods like spinach are important. I'm pretty sure he intentionally did that mistake to explain tge qualitiesbof a plant.

In the past people ate a lot of calcium rich foods. Oxalates bind to calcium in the stomach and this results in no stones from oxalates.
