Romans had a slightly different culture, but based a lot of what they did around the Greeks teachings. So there are a few things to mention. Ancient people could look that muscular, ancient people did train a lot in specific facilities for that, ancient people had an understanding of advanced concepts like periodization and nutrition. All of this can be corroborated in pic related. The Greeks did many types of physical activity. So you could potentially wrestle and get a similar body type to what you want. They also ran, they'd swim, box, do something similar to MMA, and obviously train for combat.
But like I said, to keep it simple... Just to dumbbells (halteres) and calisthenics and eat a reasonably unprocessed "Mediterranean" style diet, but your diet will be better because it will be more diverse.
