Don't be afraid to gain fat while bulking (think 500 calories extra instead of something like 250) but still cut every once in a while.

You can get away with having love handles if everything else is big too because they draw attention away form the love handles and make the physical more balanced.
But to get big enough shoulders/chest/back/arms, you need to be muscular. Just adding more fat for the sake of it won't help.
